Hunted Deer Paella with natural broth

For lukas wassmann's birthday, we slow-cooked the tendons and bones of a Swiss deer hunted near his home outside zurich. We added broccoli sausages and local mushrooms, all cooked in the paella in their garden in front of the deer forest
